"LOSING 60 cholesterol points in a month is a great result but certainly not unheard of," says Laurent Bannock, the British nutritionist whose personalized diet I've been following for the past month. We're in his Santa Fe, New Mexico, office, looking at two blood tests, one from a month ago and one from three days ago. My total cholesterol has plunged from 211 to 151; I've gone from 12.7 to 11.4 percent body fat (I'm five-eleven and 155 pounds); and a urine test shows an almost 50 percent drop in free radicals, the molecules linked to everything from arthritis to cancer.

DH: "Let me start by taking you back to the time you first came into contact with Laurent. What was your diet like and how did you feel generally?"
TS: "My diet has always been OK, though not perhaps when I was a kid. For the last 15 years it has been getting progressively better, but my lifestyle’s been getting progressively worse. The amount of stress I have in my life has increased. There’s all the travel, I have a husband who’s often on tour, I have four kids, we run an organic farm, and we have offices and a home in London. So I’m between the country and the kids, the office and the home, or I’m catching up with my husband at gigs maybe in LA, New York or Europe, I spend my life running. So I consider my eating habits have improved but my lifestyle has deteriorated."
